In order to promote the durum wheat grown in Puglia, Granoro is pursuing a series of integrated strategic initiatives across a number of areas:
3. GENETIC RESEARCH – CREA in Foggia: We carry out advanced genetic research, in collaboration with CREA (Council for Agricultural Research and Analysis of Agricultural Economics) in Foggia, to improve the quality characteristics of wheat.
4. PRODUCTION SPECIFICATIONS: These establish precise rules and production standards to ensure a high-quality product.
5. INCENTIVES: This introduces financial incentives to reward producers who meet the quality and environmental standards of the supply chain.
6. INCOME SUPPORT: This provides financial support to farmers, helping to make their incomes more stable.
7. TRACEABILITY by INDIVIDUAL PRODUCTION AREA: This involves implementing traceability systems to monitor and certify the origin and quality of the wheat for each individual production area.
8. QUALITY AND ORGANIC CERTIFICATIONS: It promotes quality certifications, including organic ones, to increase the product’s market value.
Granoro Dedicato pasta, made exclusively from durum wheat grown in Puglia, is unique because it comes from the first pasta supply chain in Italy to be certified at every stage—from seed selection to cultivation, from harvesting to storage, and all the way through to the production of semolina and pasta.
It is traceable not only in theory but also in practice, in that every step of the process can be identified.
Via the BLOCK CHAIN system—a consumer information system certified by the third-party organization DNV, which guarantees its accuracy and authenticity—we can tell you where every single package of pasta comes from
The supply chain agreement includes over 340 Apulian farms, two grain storage cooperatives, and two milling companies, which are all working together to produce high-quality, traceable, and certified food that is both environmentally and economically sustainable.

We have chosen to use only wheat grown in Puglia because it is in this region that Italy’s finest durum wheat has always been cultivated, ripening naturally in the sun without the use of chemicals.
Dedicato is the outcome of a long process, a journey involving people who have come together to share ideas and visions, and who have committed themselves and worked towards a common goal: to produce high-quality durum wheat from which to make excellent, authentic Apulian pasta … from the field to the table.

This is how Granoro Dedicato came into being: from a set of values, which became a supply chain agreement.
The bond of trust that gave rise to the Dedicato project is based on the idea of strengthening the link between Pastificio Granoro and the region of Puglia.
We were striving to establish a different relationship with farmers, one that would support their commitment to producing high-quality durum wheat.
Granoro Dedicato is produced at the Pastificio Granoro in Corato, in an area full of olive trees, not far from Castel del Monte.

The process used to make Granoro Dedicato is meticulous and careful; the bronze-die extruded pasta and low-temperature drying preserve all the quality and nutritional properties of a pasta that is a gesture of love: for those who prepare it, for those who produce it, and for those who grow its primary ingredients.
Molino De Vita in Casalvecchio di Puglia is a prime example of how agriculture and industry can contribute to the development of the local area.
The De Vita family blends tradition with technological innovation. And it is in the skilled hands of those who love the art of milling that Dedicato durum wheat is turned into high-quality semolina.
At Molino De Vita, the semolina for Granoro Dedicato is made using innovative milling techniques that respect and preserve the physical and chemical properties of the durum wheat.
The grinding process is carried out slowly, so as to preserve the product’s physical characteristics, its fragrance and its natural aroma. The semolina obtained is strictlycoarse-grained.
A supply chain agreement such as that of Granoro Dedicato is all about balance, harmony, respect and cooperation amongst all the parties involved.
Molino De Vita is committed to producing high-quality products using the finest grains from the region of Puglia, and they are conscious of their role in promoting well-being and quality.
Since 2012, ever since Granoro Dedicato was first launched, Molino De Vita has served as the link between farmers and the Pastificio Granoro:
a decision that Nicola De Vita and his family have wholeheartedly embraced, with the aim of promoting a product of Apulian excellence, made from the finest wheat grown in Puglia and ground with love in their own mill.
Pasquale De Vita is the Head of Research at the CREA office in Foggia and President of the Foggia Association of Doctors of Agricultural, Food and Forestry Sciences.
He has been working for years on durum wheat and its genetic improvement, with the aim of producing a hardy, high-protein variety of wheat native to Puglia.
Pasquale De Vita’s objective, as well as that of CREA (Council for Agricultural Research and Analysis of Agricultural Economics), is to meet the needs of all stakeholders in the supply chain,
by encouraging the production of high-quality durum wheat that can be used to produce pasta with excellent nutritional and organoleptic properties.
To produce pasta of the highest quality, the durum wheat and the semolina made from it must have a high protein content and high-quality gluten.
Pasquale De Vita’s research at the CREA in Foggia (Council for Agricultural Research and Analysis of Agricultural Economics) involves testing the resistance and organoleptic properties of durum wheat: the best varieties will be grown by farmers in Puglia and then processed into Granoro Dedicato.
Sfinge is one of the durum wheat varieties developed by Pasquale De Vita and the CREA team in Foggia, in collaboration with Granoro’s technical experts for Granoro Dedicato.
The durum wheat used for Dedicato is harvested in the sunny, dry areas around Foggia, therefore no chemicals are needed to help it ripen.
Donato Luciani is the director of the Cooperativa Agricola fra Coltivatori di Apricena (Apricena Farmers' Agricultural Cooperative) (FG), which was founded in 1976 and has around 3,100 members throughout the area of Foggia.
The Cooperative has been involved in the Granoro Dedicato project since it was launched in 2012.
The Apricena Farmers’
Agricultural Cooperative
is an essential part of the Granoro Dedicato supply chain,
as it supports its commitment to promoting Apulian durum wheat through research into new wheat varieties and techniques designed to ensure the highest possible quality.
The durum wheat produced by farmers is stored separately at the Apricena Farmers’ Agricultural Cooperative,
where Granoro stores all the wheat from the Capitanata region in state-of-the-art facilities that ensure the best possible preservation.
For the Apricena Agricultural Cooperative, joining the Granoro Dedicato supply chain stems from ‘the pride of producing durum wheat and pasta of the highest quality’.
Granoro has entered into an agreement with farmers that offers incentives to those who meet the pasta factory’s high standards of quality.
Semidaunia in Cerignola is a long-established agricultural company, which has been run by the Cirulli family for three generations.
Vincenzo passionately and proudly carries on the family tradition: having started out as seed growers, they have now expanded into storage.
Semidaunia stands as a bridge between the agricultural world of production and the worlds of industry and craftsmanship,
overseeing the entire supply chain from the selection and cultivation of durum wheat seeds right through to the agricultural techniques employed and the harvest.

in conjunction with Granoro and CREA experts, aimed at the cultivation and management of the highest quality durum wheat produced for Dedicato.

In the Daunian Sub-Apennines, durum wheat is grown following precise guidelines developed with the support of agronomists and researchers.
On his farm, Donato follows specific methods of cultivation, established in collaboration with Granoro’s technical experts and CREA, to produce wheat of the highest quality and yield.
Every stage of the process, from sowing to harvest, is recorded and tracked. This provides complete control over the quality of the wheat and ensures a transparent and reliable end product.

Among the selected varieties, Antalis stands out, having proved particularly well-suited to the local conditions and to the quality objectives of the supply chain.
