The decision to work and produce within a supply chain not only certifies the source and origin of food, but it also benefits all operators, creates value and transfers that value to the work and to what it produces.
As we produce within a supply chain, after each harvest, we eagerly return to cultivating the fields and producing high-quality crops, confident that the fruits of our labour will be purchased at a fair price by the pasta manufacturer with whom we have signed a cultivation agreement.
This is the foundation and the cornerstone of the Granoro Dedicato supply chain contract.

Granoro Dedicato Integrale is made exclusively from durum wheat grown in Puglia,
which is processed into semolina through a slow milling process that uses the whole grain, resulting in a low-refinement, high-quality product that preserves
its nutritional properties and natural flavours.
The only short-supply-chain pasta made with wheat from Puglia…high in fibre, retaining the same proportions of bran, germ and endosperm found in the wheat kernel itself.

We select
the finest durum wheat grown in Puglia;

We hull
the wheat using STONE rollers to obtain a complete and natural fibre content;

We stone-grind the whole
wheat grains to produce a semolina with superior nutritional properties (high in fibre, minerals, vitamins, proteins and fats found in both the bran and the germ)

We use slow milling
of the wheat grains to prevent the semolina from overheating, thereby preserving its natural flavour and aroma.

We carry out Bronze Extrusion
to give each piece of pasta the right degree of roughness and porosity, so that it holds the sauce well and cooks evenly

We dry our products Slowly at Low Temperatures,
respecting both the raw ingredients and the final product, without altering the properties of the wholemeal semolina, thus preserving its aroma

“Dedicato Integrale” pasta is distinguished by its high fibre content, with 7 g of fibre per 100 g of pasta, representing 28% of the daily recommended intake of fibre (the recommended daily intake of food fibre is between 25 and 30 g). A daily intake of at least 10 g of fibre helps to speed up transit through the intestines

The line of products called Attilio’s Specialities is dedicated to Mr Attilio Mastromauro, founder of Pastificio Granoro, from whom it takes its name.
This is a premium product line, featuring pasta shapes all extruded through bronze dies, made from top-quality durum wheat semolina (with a high protein and gluten content), via a complex production process and with a gentle method of very slow drying. Although the pasta is extruded through bronze dies, Attilio’s Specialties have a golden colour both before and after cooking. Unlike other bronze-extruded pastas, cooking brings out their colour even more, and Attilio’s Specialities appear bright and golden on the plate.
The pasta shapes in Attilio’s Specialities are all large, making them ideal for sophisticated dishes featuring meat-based sauces.

By choosing to use Only Durum Wheat from Puglia, grown and processed within a radius of 150 km, and by reducing the use of plastic by an average of 35% per package, Granoro is minimising the environmental impact of its production.

The Burnt Wheat
Specialties
Burnt Wheat has its origins in rural Puglia, where it was customary to gather the grains of wheat left in the fields after the harvest; these were then burnt to quickly and effortlessly remove the harvest residues and prepare the land for the next sowing. The ashes also enriched the soil with potassium and phosphorus.
It was back-breaking work that the farmers’ wives carried out under the scorching sun of Puglia to harvest the wheat used to make pasta and bread.
This grain, with its slightly smoky flavour, was humble, yet richly flavoured food.
Nowadays, this method is no longer permitted because it can cause uncontrolled fires and because it pollutes the air. The burnt wheat we use for our pasta is no longer obtained by burning, but by roasting.
It is a type of wheat that has made a comeback as a symbol of a cuisine that celebrates tradition and authentic flavours, reinterpreted with a gourmet twist.
This product line is made using durum wheat semolina from the 100% Puglia Dedicato supply chain and burnt wheat flour. It represents the very best in quality, thanks to the bronze extrusion and slow-drying process, which give the pasta a rough texture and an authentic flavour, typical of the culinary tradition of Puglia and, in particular, of the Tavoliere area.

“Due Minuti”Dedicato spaghetti is made exclusively from 100% Puglia durum wheat semolina.
The secret behind “Due Minuti” Dedicato spaghetti lies in the quality of the semolina, made exclusively from high-quality durum wheat grown in Puglia, and in the use of an innovative die, designed and patented by Granoro, which gives the pasta a truly original shape.
The patented extrusion process makes it possible to ‘risottare’ the spaghetti, a cooking technique often used in restaurants because it allows the pasta to absorb the sauce as it cooks in the pan with the addition of a few ladles of water.
How to cook “Due Minuti” Dedicato Granoro spaghetti
Granoro “Due Minuti” spaghetti can be cooked like any other type of pasta in salted boiling water, or prepared “risotto-style”. If preparing it this way, you will need almost twice as much of the main sauce as there is spaghetti. We recommend diluting it with water so that the pasta can be cooked directly in the pan together with the sauce of your choice.
The ridges across the entire surface allow the Due Minuti Spaghetti to:
- Cook in just 2 minutes, saving time without compromising on taste;
- Attain the thickness of a standard spaghetti noodle when cooked;
- Be extremely tenacious.

Our tomatoes are grown by local farmers who work the land with passion and produce deep red fruit ripened under the warm sun of Puglia.
Who processes them
Once the tomatoes have reached the right degree of ripeness, they are processed within 24 hours of harvesting at our facilities in Foggia and Cerignola, where, thanks to the expertise and professionalism of our partners, we are able to preserve the flavour and nutritional properties of fresh tomatoes.
We use EXCLUSIVELY tomatoes grown in the region of Puglia, in the areas stretching from Lesina to the southern Tavoliere plain, including the agricultural areas around Cerignola, Ortanova and Stornara, right up to the border with the neighbouring region of Basilicata.
Thanks to its extraordinary variety of ecosystems, Puglia is the leading producer of what is known as ‘red gold’: the tomato.
This product, with its countless varieties, is a key ingredient in Apulian cuisine, and in every province of the region there are small-scale producers of tomatoes of exceptional quality and a wide range of characteristics.
We use fresh, healthy tomatoes, hand-picked at just the right degree of ripeness. Processing takes place within a few hours of harvesting. Handled with the utmost care, they retain the flavour and freshness of freshly picked tomatoes.

All the products in our ‘Linea Rossa Dedicato’ range have a deep red colour and feature the typical sweet, sugary taste and flavour of tomatoes grown and ripened in the region of Puglia.

Our extra virgin olive oil is characterised by aromas of fennel, artichoke, thistle and wild herbs, and by a robust, spicy flavour with slightly bitter notes, due to its high polyphenol content.
It has a deep golden yellow colour.
